Apricot Squares
Ingredients:
2/3 cup dried apricots
1/2 cup butter, softened
1 cup sifted all-purpose flour
1/4 cup white sugar
1 cup packed brown sugar
1/2 teaspoon vanilla extract
2 eggs
1/2 cup chopped walnuts
1/2 teaspoon baking powder
1/3 cup sifted all-purpose flour
1/4 teaspoon salt
1/3 cup confectioners' sugar for decoration
Directions:
Preheat oven to 350 degrees F. Grease an 8-inch square pan. Place apricots covered in water in a small saucepan over medium heat. Let boil for 10 minutes. Drain and cool, then chop coarsely. To make Pastry: Cream together the butter, sugar and flour until crumbly. Press pastry dough into pan. Bake 20 to 25 minutes. In a large bowl, beat brown sugar into the eggs. Sift together the 1/3 cup of flour, baking powder and salt. Add to egg mixture and mix well. Stir in vanilla, walnuts and apricots. Mix until well blended. Spread mixture over baked layer. Bake for 25 to 30 minutes or until done. Let cool on wire racks. Cut into bars and dip in confectioners' sugar.
