2/3 cup shortening
1 cup sugar
2 eggs
1/3 cup milk
3 cups sifted flour
2 teaspoons baking powder
1/2 cup shredded coconut
1/2 teaspoon salt
1/2 teaspoon lemon extract
1/2 teaspoon vanilla


Cream shortening, add sugar, mix well. Add beaten eggs, milk, alternately with sifted dry ingredients. Blend mixture. Chill. Roll on lightly floured board, cut and bake in hot oven, about 375 degrees F., 12 to 15 minutes. 1 cup thick sour cream, 1/2 teaspoon soda may be used instead of shortening and milk.
