Ginger Ice Box Cookies

Ingredients:

1 cup shortening
1 cup white sugar
2 eggs
1/2 cup molasses
4 1/2 cups (sifted) flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon soda
1/2 teaspoon salt
2 teaspoons ginger
1 teaspoon lemon extract

Directions:

Cream shortening, add sugar gradually and beat well. Add beaten eggs and molasses. Sift flour, salt, ginger, baking powder etc., add to mixture. Add lemon extract, form into rolls and place in refrigerator. Chill. Slice and bake in cookie sheet, about 10 minutes in 375 degree F. oven.
