Baked Apple Dumplings #1

Ingredients:

1 1/2 cups sifted cake flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup shortening
1/4 cup milk
4 tart apples
1 tablespoon butter
1/4 cup brown sugar, firmly packed
1 tablespoon lemon juice
cream

Directions:

Sift flour once, measure and resift twice with the baking powder and salt. Cut shortening into the flour until the mixture resembles coarse meal. Add the milk and mix only until a soft dough is formed. Peel and core the apples. Roll dough on a lightly floured board into a 12 inch square. Cut into 4 squares. Place an apple in the center of each. Cream the butter and sugar together and put a part of the mixture into the center of each apple. Sprinkle with lemon juice. Bring the corners of the dough to the top of each apple and press the edges together. Brush the dough lightly with cream, place in a greased pan and bake in a 400 degree oven for about 40 minutes, or until the apples are tender.

Serve with cream.
