2 cups bread crumbs
1/4 cup butter melted over hot water
1 quart sliced apples
3/4 cup sugar, brown or white
1/4 teaspoon nutmeg
grated rind and juice of 1/2 lemon
1/2 cup hot water
almond or lemon flavoring


Mix crumbs and butter with fork. Cover bottom of buttered pudding dish with crumb mixture, cover with 1/2 of apples, sprinkle with 1/2 of sugar, nutmeg, lemon juice, cover with crumbs and remaining ingredients. Bake 40 minutes in moderate oven. Cover at first to prevent crumbs browning too rapidly.

Serve with cream.
