6 egg whites
Beat egg whites, salt, and cream of tartar until they stand at peak. Fold sugar and cocoa which have been blended together into the egg whites, add 1 teaspoon vanilla. Bake 45 minutes in 425 degree F. oven. Place the soufflé pan in hot water while cooking.
