Ingredients:

3/4 cup top milk
1/2 cup sugar
1/8 cup top milk
2 eggs
1 teaspoon gelatin
1 tablespoon cold water

Caramelize:

1/4 cup sugar
1/4 cup water
2 1/2 cups whipping cream
2 teaspoons vanilla
sprinkle top custard with nutmeg

Directions:

Mix milk, sugar, salt, scald. Add dissolved gelatin to hot milk, stir. When cool, pour over lightly beaten eggs and stir.

Caramelize:

Cook sugar, water, over slow fire until light brown. Cool. Stir into custard mixture, add whipped cream. Add 1 cup cut walnuts, or pecan meats. Blend well, pour into refrigerator trays, stir occasionally. Let stand until molded, 4 to 5 hours.
