2 quarts cream
6 egg yolks
2 cups sugar
1 can apricots
1 teaspoon lemon extract


Scald quart of cream. Beat yolks with sugar, add to scalded cream. Cook few minutes and then beat until cold. Add quart of cream, lemon extract and freeze. Put apricots through sieve. Use hand freezer.
