3 cups sliced cooked peaches
3 cups water, hot
1/2 cup minute tapioca
1/2 cup sugar
1 teaspoon lemon extract


Blend tapioca and sugar, stir in water. Cook in double boiler until clear, about 20 minutes. Add lemon. Pour over peaches. Serve cold with custard sauce.
