1/2 cup sugar
1/4 cup water
3/4 cup marshmallows, cut fine
1 egg white, stiffly beaten
few drops green color mixture
1/3 teaspoon peppermint extract


Cook the and water to a syrup, less than for thread stage. Shut off heat. Press marshmallows under syrup until melted. Pour syrup into stiffly beaten egg white and whip briskly. Add flavoring and enough color mixture to make a delicate green. If mixture becomes to thick add little hot water and beat.
