Ingredients:

1 can grated pineapple (drain)
3 cups milk
1 cup sugar
1 egg yolk
1 egg white
3/4 cup coconut dessert
pinch salt
1 teaspoon vanilla

Directions:

Put milk, sugar and salt in sauce pan, let come to boil. Mix dessert with milk thin enough to pour, stir into hot milk, cook until thick. Add well-beaten egg yolk, lastly add egg white, vanilla, cook minute longer. Chill. Pour into individual dishes, add grated pineapple, serve with whipped cream. Sprinkle top with shredded coconut.
