1 1/2 cups milk
2 tablespoons sugar
2 egg yolks
(1/2 cup cut candied ginger)
1 cup crushed pineapple
1 teaspoon lemon or vanilla extract
1 pint cream


Scald milk in double boiler, let cool. Add beaten egg yolks and sugar blended together. Stir mixture until lightly thickened, remove from fire. Let stand until cold. Add pineapple, flavoring and cream, mix well and freeze. Add ginger if desired. Hand freezer.
