2 cups sifted flour
4 teaspoons baking powder
1/3 teaspoon salt
4 tablespoons shortening, butter preferred
3/4 cup milk


Sift the dry ingredients together and rub in the shortening with the tips of the fingers until coarse and flaky. Add the milk and blend thoroughly. Place the dough on a lightly floured bread board, pat to 1/4 inch thickness and use a round biscuit cutter. Place in a buttered steamer the cut dough over 1 1/2 quarts of boiling, sweetened applesauce and 1 teaspoon of vanilla. Cover the steamer and boil vigorously for 20 minutes. Serve with a pudding hard sauce or with sweetened cream, adding a few drops of vanilla.
