1 cup rice
2 cups boiling water
1 cup milk
pinch salt
1/2 cup sugar
1/2 pint whipped cream
1 teaspoon vanilla
3/4 cup shredded coconut

Maple Sauce:

1 1/2 cups maple syrup
1/4 teaspoon vanilla


Slowly stir rice in boiling water, later add milk, cook in double boiler until done. Drain, when cool, put through ricer. Add sugar, flavoring, fold in whipped cream. Turn into mold, let stand several hours or overnight.

Maple Sauce:

Cook until slightly thickened, add 2 tablespoons butter, vanilla. Beat until smooth, serve with rice pudding.
