1 tablespoon unflavored gelatin
1/4 cup cold water
3 egg yolks
1/2 cup sugar
1/4 teaspoon salt
2 3/4 cups milk, scalded
3 egg whites
1 teaspoon vanilla
slightly sweetened whipped cream or crushed sweetened fruit


Soften gelatin in cold water for 5 minutes. Beat egg yolks slightly, add sugar and salt and blend. Add scalded milk gradually, stirring constantly. Cook and stir in a double boiler until the mixture will coat a silver spoon. Add softened gelatin and stir until dissolved. Cool. When the mixture begins to thicken, fold in beaten egg whites and vanilla and turn into 1 large mold or individual molds and chill until firm. Unmold in pudding dishes and garnish with slightly sweetened whipped cream or sweetened crushed fruit.
