Barbecued Lamb Shanks

Ingredients:

4 small lamb shanks (about 3 1/2 pounds)
fat
1/2 cup water
1/4 cup vinegar
1/2 cup ketchup
1/8 teaspoon red pepper
1 teaspoon paprika
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
2 teaspoons sugar
1 teaspoon onion seasoning
1/4 teaspoon garlic seasoning

Directions:

Melt about 1 or 2 tablespoons of fat in a heavy skillet and brown lamb shanks on all sides over moderate heat. Combine the ingredients for the sauce, pour over the meat, cover and bake in a 350-degree oven about 2 hours, or until tender. Or, continue to cook on top of the range, adding a little moisture from time to time as needed.

Serve at once with hot steamed rice.
