4 pounds boned lamb shoulder
Melt butter and combine with crumbs and seasonings, then add milk or stock and toss lightly. Stuff boned shoulder
and sew or skewer the edges together and place on a rack in an uncovered roaster. Roast in a 325-degree F. oven,
allowing 35 to 40 minutes per pound.
Makes 6 to 8 servings
