Stuffed Lamb Shoulder Roast

Ingredients:

4 pounds boned lamb shoulder
1/2 cup butter or margarine
6 cups soft bread crumbs
1 teaspoon onion seasoning
1/4 teaspoon garlic seasoning, if desired
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk or meat stock

Directions:

Melt butter and combine with crumbs and seasonings, then add milk or stock and toss lightly. Stuff boned shoulder and sew or skewer the edges together and place on a rack in an uncovered roaster. Roast in a 325-degree F. oven, allowing 35 to 40 minutes per pound.

Makes 6 to 8 servings
