1 pound unsalted butter
1/2 cup confectioners sugar
2 egg yolks
1 teaspoon baking powder
1 teaspoon vanilla
1 once metaxa
6 cups flour, about
1 cup chopped almonds , toasted


Cream butter in mixer until pale yellow in color. Add sugar then add yolks, one at a time, beating well. add vanilla and metaxa. Combine and sift baking powder with flour and add to mixture until desired consistency. Add almonds. Roll dough and cut into diamond shapes or roll into balls. Bake on cookie sheet at 350 for 20 - 25 minutes. Sprinkle with confectioners sugar.
