Lime Bars

Ingredients:

Crust:

2 cups flour
1/2 cup powdered sugar
1 cup chilled butter or margarine
1 teaspoon lemon or lime extract

Filling:

4 large eggs
1 1/2 cups sugar
4 tablespoons flour
1/2 teaspoon baking powder
6 to 8 limes (enough to make 1/4 cup)
grated lime rind from all the limes

Make crust either by placing ingredients in food processor with metal blade and processing a few seconds to make coarse crumbs. Or by hand: combine flour and sugar and cut in chilled butter until coarse crumbs. Pat mixture evenly into a well greased 9 x 13 inch pan.

Bake crust in 350 oven until light golden about 15 to 20 minutes. Meanwhile make filling. Beat eggs until well blended for several minutes. Beat in flour, sugar and baking powder. Blend in lime juice and grated rind last. Spread mixture evenly over prebaked crust and return to oven and bake about 20 more minutes or until filling is set. Cool completely before cutting.

Dust with powder sugar. Cut into desired amount of bars. Note: These are a thin and tangy pastry. Serve well chilled or at room temperature.
