1 teaspoon baking powder
2 cups flour
1 teaspoon sugar
1/4 teaspoon salt
1 cup shortening
juice 1/2 lemon
1 egg
5 tablespoons cold water


Sift the baking powder, flour, sugar and salt. Add the shortening; and chop into the flour mixture with a chopping knife. When well blended, add the egg, beaten, the lemon juice and water; and gradually mix, chopping, not stirring. Roll into a long strip; fold in threes, by bringing one end over the middle and lapping the other end over. Chill for 10 minutes. This is particularly good for fruit tarts and pies.
