1 cup sugar
grated rind of 1 lemon
strained juice of 1 lemon
4 egg yolks, well beaten
1 1/2 teaspoons gelatin
1/3 cup cold water
1 teaspoon vanilla
4 egg whites
1 baked flaky pie crust made of cream cheese
whipped cream


Blend 1/2 of the sugar with the lemon rind. Add the lemon juice, then the beaten egg yolks. Cook slowly over boiling water, stirring constantly. Soften the gelatin in cold water and stir into the egg mixture. Cook 1 minute, then cool. Add vanilla and fold in stiffly beaten egg whites after adding the remaining 1/2 cup sugar. Pour into the cheese crust, chill 3 to 4 hours. Cover the whipped cream just before serving.
