3 egg yolks
1 cup brown sugar
6 tablespoons scant flour
2 cups milk
4 tablespoons butter
1 teaspoon vanilla
1/4 teaspoon salt
3 tablespoons caramel syrup
1/2 teaspoons nutmeg

Caramel Syrup:

1/2 cup sugar
1/3 cup boiling water
add slowly to fire


Beat egg yolks with sugar; mix flour with little water to make smooth paste; add to first mixture, add milk, salt and caramel syrup. Cook in double boiler until thick. Remove from fire; add butter and vanilla. Cool; add beaten egg whites or reserve for a meringue. Pour into baked crust. If meringue is used add 4 tablespoons sugar to stiffly beaten whites, spread on return to slow oven to brown, add boiling water, cook to cream, stir.
