Dried Prune or Apricot Pie
Ingredients:
1 pie dough
1 tablespoon flour
3/4 to 1 cup sugar
3 cups unsweetened pitted prunes or apricots
1 1/2 teaspoons lemon juice
1/4 cup fruit juice
1 tablespoon butter
Directions:
Combine flour and sugar, add to the fruit and toss together to blend. Line a 9 inch pie pan with half the pie dough rolled 1/8 inch thick.
Fill with fruit and dot with butter and pour fruit over the top. Roll out remaining pie dough and perforate to allow for the escape of steam. Adjust on top of the pie, trim, seal and crimp the edges.
Bake in a 450 degree oven for 10 minutes, then reduce the heat to 350 degrees and continue to bake for about 25 minutes, or until the crust is golden brown.
