1 1/2 cups sugar
1/3 cup sifted flour (scant)
2 cups boiling water
little salt
4 egg yolks, beaten
4 tablespoons corn starch
1 tablespoon butter
6 tablespoons lemon juice
2 teaspoons grated lemon rind
1 baked pie shell


Blend corn starch, flour, and sugar, stir and add to boiling water. Stir constantly for about 5 minutes, cover mixture and steam 15 minutes. Add butter, beaten egg yolks only 2 minutes. Remove from fire, add lemon juice and grated rind. When cool, fill bake pie shell, cover with meringue.

Meringue Ingredients:

2 egg whites, beaten stiff
3 tablespoons sugar
1/2 teaspoon lemon juice
1/4 teaspoon vanilla


Cover top of pie and return to oven to lightly brown. For thick meringues, bake in slow oven 300 to 325 degrees F. for 20 to 30 minutes depending upon thickness. There with be no liquid syrup around edge of pie.
