Meringue Topping for Pies

Ingredients:

For 9-inch pie:

3 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
6 tablespoons sugar
a few drops of any flavor extract

For 8-inch pie:

2 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
4 tablespoons sugar
a few drops of any flavor extract

Directions:

Add salt to egg whites and beat until frothy, then add cream of tartar and beat until frothy throughout. Add sugar, a tablespoon at a time, beating well after each addition and continuing to beat until all has been added and the resulting mixture will hold stiff peaks.

Pile on pie filling, pulling the meringue to the edge of the crust to seal the filling completely. Make swirls in the top of the meringue and bake in a 375 degree oven 12 to 15 minutes, or until golden brown. Or bake in a 400 degree oven for 8 to 10 minutes.
