Pie dough
4 cups sliced, peeled peaches
1 tablespoon lemon juice
1/4 teaspoon extract of almond
3 tablespoons flour or 1 1/2 tablespoons cornstarch
3/4 cup sugar
1/8 teaspoon salt
1 tablespoon butter


Peel peaches and slice. Combine flour or cornstarch, sugar and salt and blend thoroughly. Add to peaches and toss together until slices are coated with sugar mixture.

Line a 9 inch pie pan with half the pie dough. Arrange peaches in crust and sprinkle with a combination of lemon juice and extract of almond. Dot with butter. Adjust the top crust and trim and seal the edges.

Bake in a 450 degree oven for 10 minutes, then reduce the heat to 350 degrees and continue to bake for about 30 minutes, or until the peaches are tender.
