Pumpkin Pie #1
Ingredients:
1 unbaked 9-inch pie shell
2 eggs, slightly beaten
2 cups canned or cooked pumpkin
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1 2/3 cups evaporated milk
Directions:
Beat eggs slightly and add pumpkin. Sift sugar, salt and spices together and add to pumpkin mixture. Add milk and blend.
Pour into the unbaked pie shell and bake in a 425 degree oven for 15 minutes, then reduce the heat to 350 degrees and continue to bake for about 35 to 40 minutes longer, or until a knife inserted in the center comes out clean.
Cool on a rack and serve as soon as possible.
