2 cups cooked pumpkin
2/3 cup sugar
scant teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
2 tablespoons molasses
1/3 teaspoon nutmeg
3 eggs
2 cups milk
3 tablespoons butter, melted over hot water
1 teaspoon lemon extract


To steamed mashed pumpkin, add sugar, salt and spices. Add eggs slightly beaten, milk, add melted butter. Mix thoroughly. Line pie tin with chilled pastry, brush with unbeaten egg white. Bake shell in hot oven setting same size inside the pastry lined pan and bake in oven 500 degrees F. for 10 minutes. Remove second pan; pour in pumpkin mixture. Reduce heat to moderate, 350 degrees F., and bake 30 minutes until firm.
