20 graham crackers
1 cup confectioners' sugar
1 teaspoon cinnamon
1/2 cup butter
1 egg
1 cup whipping cream
8-ounce can crushed pineapple (drain)


Crush crackers and roll very fine. Line glass pie plate with 1/2 of cracker cracker crumbs, but do not butter plate. Cream butter, slowly add sugar, mix well, add unbeaten egg and whip thoroughly. Smooth mixture over plate with crumbs. Whip cream, fold in pineapple and cover with remaining crumbs. Cool 6 hours before serving.
