Special Lemon Pie
Ingredients:
1 cup granulated sugar
2 egg yolks
1 1/2 cups milk (heat)
1/2 cup cold water
3 tablespoons lemon dessert
Meringue:
2 egg whites, beaten stiff
3 tablespoons granulated sugar
1/4 teaspoon lemon extract
Directions:
Blend lemon dessert and water. Add beaten egg yolks, sugar and milk, cook in double boiler 15 minutes, stirring constantly. Pour into baked pie shell when mixture cools. When cold, cover with meringue, made of stiffly beaten egg whites, sugar, lemon extract. Return to over to brown slowly.
