2 pounds pork tenderloin
salt and pepper
6 tablespoons fat
1/4 teaspoon onion seasoning
1/4 cup flour
2 cups milk or water


Have tenderloin cut in 2-inch lengths, then flatten with a cleaver or broad-bladed knife. Dredge with flour and brown on both sides in hot fat. Season with salt, pepper and onion seasoning. Arrange in a baking dish. Add flour to drippings in the pan and stir to blend. Add milk or water and cook and stir until the resulting sauce is smooth and thickened. Pour over the browned patties and bake in a 350-degree oven about 1 hour or until the meat is tender.

Makes 4 to 5 servings
