Chinese Pork

Ingredients:

1 pound lean pork shoulder
salt and pepper, to taste
1 cup meat stock
2 medium green peppers, coarsely cut
3 tablespoons chopped onion
4 slices pineapple, cut in eights
3 tablespoons cornstarch
1/4 cup sugar
1/4 cup vinegar
2 teaspoons soy sauce
1/2 cup pineapple syrup
cooked rice

Directions:

Cut pork into half-inch cubes and brown over moderate heat in a small amount of fat. Season with salt and pepper, add stock and cook, covered, for about 20 minutes. Add peppers, onion and pineapple and cook for 10 minutes. Blend cornstarch, sugar, vinegar, soy sauce and pineapple syrup and add to the pork mixture. Stir and cook until the resulting sauce is thickened and clear. Add more salt, if necessary, and serve on beds of cooked rice.
