Grilled Pork Wrapped in Lettuce

Ingredients:

1 1/2 pounds ground pork
12 water chestnuts, finely minced
1 garlic clove, pressed or minced
2 tablespoons soy sauce
3 teaspoons vegetable oil
2 teaspoons lemon juice
1/4 teaspoon ground ginger
1/2 teaspoon sugar
red pepper flakes
lettuce leaves (Boston or Bibb)

Directions:

Preheat grill. Combine all ingredients in a large bowl. Using hands, shape meat mixture into cylinders approximately 3 inches long. Grill over direct heat, turning frequently until cooked through (about 10-12 minutes). Remove from heat and refrigerate, if desired.

Dipping Sauce Ingredients:

4 tablespoons soy sauce
4 tablespoons water
4 tablespoons sugar
2 tablespoons wine vinegar
1 tablespoon dry sherry
1 tablespoon sesame oil
1 clove garlic, pressed
red pepper flakes to taste

Directions:

Combine sauce ingredients in small saucepan. Simmer 10 minutes and set aside. To serve, place pork and lettuce leaves on platter and provide small bowls of the dipping sauce. Wrap pork in lettuce leaf and dip into sauce.
