Jambalaya

Ingredients:

1 tablespoon oil
2 cups diced cooked ham
1 tablespoon flour
1 1/2 cups tomato juice
1/3 cup minced onion
1/3 cup chopped green pepper
1 cup cooked or canned shrimp
2 cups cooked rice
1/4 teaspoon garlic seasoning
dash red pepper
salt and pepper to taste

Directions:

Heat oil in heavy skillet, add ham and cook lightly. Add flour and blend. Add tomatoes, onion and pepper and cook, covered, until sauce is thickened. Add shrimps and rice, season and heat thoroughly.

Makes 5 to 6 servings
