1/3 cup butter
1 1/2 cups cubed cooked pork
1/4 teaspoon garlic seasoning
1/2 teaspoon onion seasoning
1/4 teaspoon pepper
1 1/2 teaspoons salt
1/4 cup flour
2 cups water
2 cups tomato juice
1/2 cup uncooked rice


Melt butter in a skillet, add the pork and cook and stir until the meat is beginning to brown. Transfer to a baking dish. Add seasonings and flour to drippings in the pan and blend. Add water and cook and stir until the resulting sauce is smooth and thickened. Add tomato juice gradually. Remove from heat, add uncooked rice and pour over the meat in the casserole. Cover and cook in a 350-degree about 1 to 1 1/2 hours, or until the moisture is absorbed. Uncover the baking dish during the last 15 to 20 minutes of baking.

Makes 5 to 6 servings


  1. Other meats or poultry may be used in place of pork, if desired.
