1 pound pork sausage meat
3 tablespoons sausage drippings
3 tablespoons flour
1 can whole kernel corn
1 1/2 cups milk
2 tablespoons chopped green pepper
1 cup cracker crumbs
2 tablespoons drippings


Slice sausage into patties and cook until lightly browned, about 8 to 10 minutes. Remove from pan and pour off all but about 3 tablespoons of drippings. Add flour to drippings in pan and blend. Add milk and cook and stir until the resulting sauce is smooth and thickened. Add corn and green pepper.

Sprinkle half the cracker crumbs in the bottom of a casserole, add the creamed mixture, then all but three of the sausage patties, more of the corn, then the remaining crumbs mixed with 2 tablespoons of the sausage drippings. Arrange remaining patties on top and bake in a 350-degree oven about 25 to 30 minutes.

Makes 4 to 5 servings
