4 pounds spareribs, quite lean
Wipe the spareribs with a clean cloth and cut into pieces for serving. Sprinkle with salt and pepper. Place the bacon fat in the frying pan and heat, but do not brown. Sear the spareribs to a golden brown and remove to a hot platter. Add the flour and chili powder to the hot fat and stir in the boiling water and bring to the boiling point. Stir in the tomatoes and seared meat. Cover and simmer over a low fire 1 hour.
