4 to 5 pounds stewing chicken
seasoned flour
1 quart boiling water
1/2 teaspoon celery salt
1/4 teaspoon onion seasoning


Dredge chicken in seasoned flour and brown in a small amount of shortening until golden. Pour off excess fat, add boiling water and celery salt and onion seasoning. Cover and simmer gently from 3 to 3 1/2 hours, or until tender. Remove chicken to warm platter and thicken liquid with thin flour and water paste, allowing 2 tablespoons of cold water for each cup of liquid in the pan. Pour over chicken and serve at once.

Makes 5 to 6 servings
