1 chicken, disjointed
3 teaspoons paprika
dash pepper
1/2 teaspoon onion seasoning
1 1/2 teaspoon salt
1/2 cup flour
1 cup thick soured cream (or 1 cup evaporated milk plus
1 tablespoon vinegar or lemon juice)


Combine seasonings and flour and dredge chicken in the mixture. Brown in a small amount of hot oil until golden, then remove to a baking dish. Pour off excess oil and add any remaining flour to the drippings. Add cream and stir and cook until the mixture is thickened. Pour over chicken and bake, covered, in a 350-degree oven about 1 hour, or until tender.

Makes 4 to 5 servings
