Lemon Pepper Chicken
Ingredients:
2 whole fryers
2 tablespoons margarine
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon garlic powder
lemon pepper
paprika
lemon juice
Directions:
Rub the chicken breasts with margarine & lemon juice. Season with salt & pepper. Sprinkle chicken (inside and outside) generously with lemon pepper, garlic powder, paprika. Put charcoal and water in proper pans of a charcoal, water smoker. Let charcoal burn down about 30 minutes. Place prepared chickens on lower rack of the charcoal smoker. Cook at least 6 to 8 hours. You can cook 4 chickens by placing 2 on the top rack. If you wrap them in foil and freeze them, they are still very good after reheating for about an hour or two at 350° (especially the 2 cooked on the top rack).
