1/2 cup crushed or finely diced pineapple
3 tablespoons butter
2 cups chicken broth
1/2 cup pineapple juice
3 tablespoons flour
2 cups cubed cooked chicken
1/2 cup diced celery
2 tablespoons chopped green pepper
1/4 cup chopped almonds
1 teaspoon salt
1 tablespoon soy sauce
crisp chow mien noodles


Sauté pineapple in butter for 5 minutes, add chicken broth and bring to bubbling. Blend flour and pineapple juice and add to first mixture. Cook and stir until thickened, then add chicken and seasonings. Add celery, green pepper and almonds, 5 minutes before serving. Season to taste and serve over heated chow mien noodles.

Makes 6 servings
