1 chicken, disjointed
1 1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ginger
1/4 teaspoon poultry seasoning
1/3 cup flour
1/2 cup shortening
2 cups cream or evaporated milk
1/4 pound sliced mushrooms


Combine flour and seasonings and dredge the chicken with the mixture. Melt shortening in a heavy skillet and brown chicken until golden. Transfer pieces to a casserole and sprinkle any remaining flour and seasonings over the top. Heat cream or milk, add mushrooms and pour over the top of the bird. Cover and bake in a 350-degree oven for about 1 hour, or until tender.

Makes 4 to 5 servings


  1. If desired, 1 can of cream of mushroom or celery soup, diluted to sauce consistency, may be substituted for the cream and mushrooms given above.
