2 broilers, 2 1/2 pounds each
2 small onions
3 stalks celery
1 teaspoon salt
1/4 cup rice, wash well and cook


Wash, split broilers, place cut side down on iron skillet. Add onions and celery. Add boiling water to half cover chicken. Cover tightly and cook slowly 50 minutes. Add the cooked rice and keep cooking until chicken is tender, 20 minutes longer or more. Remove onion and celery and serve rice with the chicken.
