Tomato Preserves

Ingredients:

1 pound yellow pear tomatoes
1 pound sugar
2 ounces preserved ginger
2 lemons

Directions:

Pour boiling water over tomatoes. Remove skin, add sugar, let stand overnight. In morning pour off syrup, boil syrup until quick thick. Skim. Add tomatoes, ginger cut in small pieces, lemon sliced very thin. Boil until tomatoes are clear.
