2 cups chopped cooked chicken
1 cup cut celery hearts, crisp in ice water
1 cup cut blanched almonds
1 1/2 cups chicken stock, strain
celery salt
cooked mushrooms and cooked sweetbreads may be added


Dissolve 1 tablespoon plain gelatin in 1/4 cup cold water, add to hot stock. Blend all ingredients, turn into mold rinsed in cold water. Serve on crisp lettuce with salad dressing. Instead of stock, may add 1 1/2 cups hot strained cranberry juice, add little sugar, let cool. Pour over salad mixture, chill. Serve with salad dressing.
