8 ounces Rotini pasta
1 2-pound package teriyaki pork tenderloin, cut into ¼-inch
1 teaspoon olive oil
¼ cup low sodium Soy Sauce
¼ cup sherry
½ teaspoon sesame seed oil
1 cup green onion, sliced
½ cup green bell pepper, chopped
3 cups fresh spinach leaves
¼ cup toasted almond slices


Cook pasta according to package directions; drain and place in large bowl; let cool. In large skillet over medium-high heat, sauté pork in olive oil 2 to 3 minutes or until no longer pink. Chill. To make dressing, in small bowl, combine soy sauce, sherry and sesame seed oil. Combine pasta with green onion and bell pepper. Place spinach in large serving bowl. Top with pasta mixture and pork. Sprinkle with almonds. Serve with dressing.

Makes 8 servings
