Seven Layer Salad
Ingredients:
1 package 10 ounces frozen peas, thawed
1 head lettuce, shredded
½ cup each chopped celery and bell pepper
2 cups mayonnaise
2 tablespoons sugar
6 ounces Cheddar cheese, grated
¼ cup Parmesan cheese
8 slices crisp cooked bacon, crumbled
Directions:
Drain peas on paper towel. Place lettuce in large salad bowl. Layer chopped vegetables and peas over lettuce. Beat mayonnaise until of spreading consistency. Spread mayonnaise about ¼ inch thick over peas. Sprinkle sugar and cheeses over mayonnaise. Top with bacon. Chill tightly covered, about 8 hours. Keeps up to 1 week.
