3 tablespoons tarragon vinegar
3 tablespoons water
1/2 onion, sliced
4 egg yolks
4 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon paprika
onion seasoning
red pepper


Heat water, vinegar and onion to boiling point, remove onion, pour mixture over lightly beaten egg yolks. Add seasoning. Cook over hot water until mixture thickens, stirring constantly, add butter little at a time. Add paprika.
