1/3 cup tarragon vinegar
3 egg yolks
4 tablespoons butter, creamed
1/2 teaspoon salt
1/8 teaspoon paprika


Heat vinegar, pour on well beaten yolks of eggs, set bowl with mixture over hot water, stir constantly until thick. Remove from heat, add butter, half teaspoon at a time, blend into sauce. Season, serve at once.
