3 tablespoons butter
3 tablespoons flour
1 cup thin cream
1 cup fresh crabmeat, lobster, or shrimp
1 egg
juice of 1/2 lemon
dash nutmeg


In double boiler over boiling water, melt butter, stir in flour. Slowly stir in cream. Add salt in flour. Slowly stir in cream. Add salt and pepper. Add crabmeat, blend all ingredients. Pour into buttered casserole, cover with Hollandaise Sauce. Place under broiler until blistered and brown. Add paprika.
